Erythritol is a type of carbohydrate called sugar alcohol, which are water-soluble compounds found naturally in many fruits and vegetables. It is also produced commercially by fermentation from a simple sugar derived from corn called dextrose. It is used as a zero calorie sweetener to help replace calories from sugar-containing carbohydrates in packaged foods and beverages.

What are the health benefits of consuming erythritol?
Like most sugar alcohols, erythritol is not as sweet as sugar: it is only about 60-80 percent sweet.     A decent erythritol. It's just not 1.1 and needs a little more. It has a good price and I use it in cakes, for example, where it melts. For recipes where it doesn't melt, I use powdered sugar. (I can't taste a difference between the two). I tried to make powdered sugar with the crystallized ones, but all I managed to do was burn 2 molds.
