- 2 cups of sour trachana
- 5 cups of water
- 1 cup of evaporated milk
- 1 teaspoon of butter
- Some oil for the sheets
- 5 eggs
- ½ cup of grated kefalotyri cheese
- 1 cup of feta cheese
- Salt
Instructions: In a pot, add the water, butter, salt, and milk and bring to a boil. Add the sour trachana, stirring continuously, and cook for 10-15 minutes. When the mixture cools, add the cheeses and 4 eggs, stirring continuously. Meanwhile, grease a baking dish and layer 3 sheets, brushing each with oil. Spread the mixture and cover with the remaining sheets. Beat one egg with oil and water, score the pie, and pour the egg mixture on top. Bake at 180°C for about 45 minutes.
