The two-grain wheat (triticum dicoccum) is perhaps the oldest cereal staple in ancient diets. It is also called "ZEIDOROS" (the one who gives life). It was one of the first cereals cultivated by humans. Evidence of its exploitation dates back 10,000 years and has been found in excavations throughout Greece and Asia Minor. The cereal triticum dicoccum (German Emmer) has survived to this day in small-scale production in Greece, India, Turkey, Germany (Bavaria), Italy, and elsewhere. Its nutritional value is indisputable.
