The raw material comes exclusively from Greek Zea (emmer wheat - triticum dicoccum) grown in northern Evros, without pesticides and with the addition of Zeolite to minimize fertilizers.
It is ground traditionally in the stone mill, and the final product contains no improvers or chemicals. The nutritional value of Zea flour is high, ideal for making bread, pasta, pies, biscuits, and pizza.
