Mariana's Vine Shoots
Vine shoots are the small tendrils that the vine uses to climb the supports it finds. In modern viticulture, the supports are mainly wires on which the vines rest. Thus, the usefulness of vine shoots is minimal to negligible for the growth of the vine.
For this reason, vineyard owners prune the vines and, instead of discarding the shoots they collect, they turn them into a tasty pickle in salt and vinegar, ideal for accompanying ouzo or tsipouro, or for decorating salads.
