Ceylon cinnamon, compared to Indonesian cinnamon, is lighter in color, has thinner layers folded inside, and contains much smaller amounts of coumarin, which is why it has a milder flavor.
A well-known spice since biblical times, Ceylon cinnamon was one of the ingredients in Moses' holy anointing oil, and later traders seemed to keep its origin a secret to maintain their monopoly. It was considered a luxury spice, and the seafarers of the time were always in search of it.
Studies have shown that among the positive properties it has for health are that it is a high source of antioxidants, has anti-inflammatory properties, contributes to heart health protection, and fights diabetes.
In cooking, it is one of the most common seasonings, suitable for spicy dishes and sweet plates. It adds aroma to roasted meats, to pot dishes, as well as to many spoon sweets or baked goods. Wines, warm or refreshing drinks, are flavored with cinnamon.
