The honey from the sweetberry is produced by the Souka family on the slopes of Achaia. The flowering of the sweetberry begins in November, and its flowers provide pollen and nectar until late spring.

- the substance Arbutin, which purifies the blood and regulates cholesterol levels.
- the polysaccharide Tyranose, which increases cell longevity.
- the enzyme Diastase or Amylase, which breaks down starch.
Taste: It has a distinctive strong, very rich bittersweet taste with aromatic notes of bitter caramel.
Nutritional Value: It is rich in trace elements and vitamins, and is one of the best choices for boosting the body. It contains natural antibiotic substances, has diuretic and antiseptic effects on the urinary system, and is used in cases of mild bronchial infections. Its calories are lower than other honeys due to the low percentage of glucose and fructose.
Aroma: It does not present a strong aroma.
Color: The color is initially yellowish and when it matures, it acquires a dark bronze color.
Crystallization: It crystallizes relatively quickly and acquires a buttery texture.
According to an analysis by the Beekeeping Institute of Bremen and Kraft company in Munich, it contains:
- 0.0% sucrose (common sugar)
- 36.1% fructose
- 28.9% glucose
- 1.7% maltose
- 1% tyranose
- 19.5% moisture
Its pH ranges around 4.5. In our country, sweetberry and chestnut honey are hardly known; however, they are sought after for their beneficial properties in the markets of Central Europe, Russia, and Arab countries.
