It is a cereal different from the others, with exceptional nutritional value and much higher protein content (14%) compared to other cereals. It contains all the essential amino acids, many vitamins - mainly of the B complex - which are usually found in animal foods, while it is rich in fat-soluble vitamins E and K. Finally, it contains folic acid, as well as several minerals such as calcium, iron, copper, manganese, magnesium, potassium, selenium, and zinc.

Buckwheat does not contain gluten, so it can be used by people who are intolerant to it (celiac disease). It also contains quite a bit of fiber and complex carbohydrates, making it suitable for people with diabetes, as it stabilizes blood sugar levels.
