Spelt wheat is one of the oldest types of wheat in Greece, ideal for gentle farming as it requires no fertilizers or pesticides. It is an excellent food, and its processing yields products of high nutritional value.

This cereal grain has been cultivated in Greece since the Paleolithic era, with references to seeds dated as far back as 12,000 B.C. The ancient Greeks considered spelt wheat very important and nutritious, using it for baking bread.
