Fir honey belongs to the category of honeydews and is collected from scale insects & aphids that parasitize the Greek species of fir and produce honeydew secretions that bees can exploit. The most important of these is the scale insect Phemicryphus, which parasitizes the Cephalonian fir, covering large areas in the mountainous regions south of Olympus, in Evrytania, Pertouli, Karpenisi, Taygetos, Arcadia (Mount Parnonas & Mount Mainalo), mountainous Nafpaktia, and elsewhere.
It is collected in the pristine fir forests of Parnonas in the southeastern part of the Arcadia region at altitudes of 800-1300 meters, in early summer (June to July). It is of exceptional quality, particularly viscous, and never crystallizes due to its low glucose content. It is rich in trace elements (potassium, magnesium, phosphorus, iron) and helps in better assimilation of sugars by the human body.
