It is made from leaves and buds of Camellia sinensis that have not undergone the same withering and oxidation process used to produce oolong and black tea. There are several varieties of green tea, which differ significantly based on the variety of C. sinensis used, growing conditions, gardening methods, production processing, and harvest time. 2. *Oxidation is the process where the leaf changes color from green to light brown and then dark brown. The more it oxidizes, the darker the tea and stronger in taste compared to other types of tea.
