Lens rice with black lentils, 500g.
Made with Greek black lentils and yellow rice, lens rice is an important source of iron. The combination of legumes with rice provides high biological value protein, comparable to meat. It is recommended for vegetarian diets.
Recipe for lens rice:
- 250g lens rice
- 1/2 cup olive oil
- 2 dried onions sliced
- 1 cup water
- Salt
- Pepper
- Yogurt with mint for serving
Instructions:
Rinse the lens rice and let it soak for 20 minutes. Then boil it for about 15 minutes, drain it and set it aside. In a deep pan, add the oil and sauté the onions over low heat for 5 minutes until caramelized. Add the lens rice and the cup of water, and simmer until the liquids evaporate. Serve with yogurt and chopped mint.
