    Intensely umami, garlicky, very salty — I dilute it mainly with light soy sauce, a very small amount of light vinegar, and use stevia to smooth out its edges. I find its texture interesting because of the combination of mashed and whole black beans. Very strong, both as a sauce for a stir-fry dish and as a salad dressing.
