    Very good mix that makes the bread rise quickly and a lot, as long as the water is at the right temperature when kneading and then it has a warm environment to rise.

    I make bread in the bread maker, and the truth is that with the instructions on the packaging, it didn't rise very well, even leaving it for an extra hour and trying various programs. It also had a strange aftertaste, so I had stopped using it.. Until I discovered the biga process where you mix flour, water, and yeast the night before, and in the morning you make the regular recipe with flour, water, and salt, and you add the yesterday's risen mixture. There is a recipe from a famous TV chef if you search for biga on Google. Just instead of 1/4 teaspoon of yeast, I use a whole teaspoon from the packet, and in the preparation of the main dough, I also add a little extra yeast. It's an extra 5 minutes of work, but it rises nicely, it's tastier, and it stays fluffy for days.
