Mastic is defined as the resinous product obtained from the tree Pistacia lentiscus L. It is a spice product of the mastic-bearing mastic tree. A fragrant resin (gum) produced from the bark of the mastic tree. It is primarily used in confectionery and distillation, but also in cooking, offering a unique and pleasant flavor. It pairs very well with chicken and turkey fillets. Additionally, the well-known mastic sweet, known to all as 'submerged', is made from mastic and sugar. Chios mastic is considered among the best.

Care should be taken when using mastic, as a large dose of this aromatic spice imparts a unique bitterness to sweets and dishes.
