Ammonium is used in cooking and even more in the food industry as a raising agent and acidity regulator. Ammonium is called ammonium bicarbonate NH4HCO3. It is a white powder or white or translucent mass of crystals with an ammonia scent. Ammonium is used as a food additive otherwise known as ammonium acid carbonate.
