HOJICHA: ROASTED TEA FROM KYOTO

The organic Hojicha tea is a roasted green tea with a toasted, smoky aroma and a unique caramel and nutty flavor. It has a deep purple color and its taste is utterly addictive, without any bitterness that characterizes other green teas, making it an ideal alternative to black tea. The roasting process of the leaves was first carried out in 1920 in Kyoto, from where the name “hoji-cha” (ほ う じ 茶), meaning roasted tea, originates.

It is rich in antioxidant ingredients that contribute to fighting oxygen free radicals. It is made from leaves and buds of Camellia sinensis that have not undergone the same withering and oxidation process used to produce oolong and black tea. There are several varieties of green tea, which differ significantly based on the variety of C. sinensis used, growing conditions, gardening methods, production processing, and harvest time. 2. *Oxidation is the process where the leaf changes color from green to light brown and then dark brown. The more it oxidizes, the darker the tea and stronger in taste compared to other types of tea.

I boiled 1 tablespoon of hojicha with 1 teaspoon of sugar in a very small amount of water for 6 minutes and poured it over milk with ice cubes, and it was wonderful!
