The De Buyer mandoline has an integrated horizontal stainless steel blade set at a 35° angle, for slicing or julienning fruit and vegetables. The cutting thickness is adjustable from 0 to 5 mm in 1 mm increments, using the scale on the side. The two julienne blades cut to thicknesses of 2 mm and 4 mm.
