Buckwheat (Fagopyrum esculentum), also known as black wheat or grechka, is a grain more closely related to sorrel and rhubarb.

It is gluten-free and is rich in:

  • Proteins
  • B vitamins
  • Vitamin E
  • Vitamin K
  • Folic acid
  • Mineral trace elements
  • Dietary fiber

Preparation method:

  • Ingredients:
    • 1 cup of buckwheat (rinse with a little water first, in a strainer)
    • 2 cups of water
  • Execution:
    • Bring to a boil and then reduce the heat until all the water is absorbed (~20').
    • You can add spices/herbs such as salt, bay leaves, turmeric, etc.
    • Finally, add a tablespoon of olive oil.
    • It can be consumed with milk, as a side dish with meat, in salads, or even as flour for baked goods.
