One of the laborious duties at Mount Athos is that of the cook. The cook must prepare the food early so that when the sacred service is over, the fathers will find the meal ready.
The food varies according to the day. At Mount Athos, fasting is strictly observed. On Mondays, Wednesdays, and Fridays, throughout the year, the meal is a single oil-free dish, except on feast days.
The duty is laborious but also pleasant. The serving monk takes joy in providing his brothers with the best possible comfort by offering them a nice dish, carefully and lovingly prepared.
