Pine honey has a distinct aroma and is dark in color when produced in the autumn, and lighter when produced in the spring. Its sugar concentration is low, making it not overly sweet, and it crystallizes relatively slowly. It comes from the honeydew of the insect Marchalina hellinica and is mainly produced in N. Evia. Approximately 75% of the total honey production in Greece comes from pine trees! Studies concerning the antioxidant content of pine honey have shown that it is a very rich honey in phenols such as protocatechuic, caffeic, vanillic acid, and p-coumaric acid. These substances give it a particularly high antioxidant capacity. It has a high content of trace elements such as calcium.
