Fir honey is one of the rarest honeys in the world. It has a taste reminiscent of vanilla and a pearly-caramel color, with a creamy texture. The bees produce it from honeydew secreted by the insect Physokermes Hemicryphus, exclusively in the fir forests of the Peloponnese, particularly in Mainalo and Parnon. Its production is periodic every few years and is rich in trace elements (potassium, magnesium, phosphorus).
