[...] Finally, a wine is judged by its taste. And in this case, the variety of grape used to produce the wine, the way it was cultivated, and the process followed, stand out vividly. A wine with a strong astringent sensation is very likely to come from the vineyards of Naoussa. A wine that is soft on the palate probably originates from another region, possibly Nemea or perhaps Crete. The possibilities, combinations, and vocabulary used during a tasting are rich and inexhaustible. Having judged a wine and classified it qualitatively, the most delicate point is its harmonious combination with food. There, on the table, next to a well-cooked meal, good wine finds its completion and full justification. Around such a table, where the harmony of knowledge creates the harmony of flavors, people come together "in communion with wine," in an atmosphere of physical and mental upliftment.
The strict and ambitious goal of this book is to add a small stone of knowledge and contribute to the effort we all make, seeking ways of life characterized by quality, cultural content, and communication.
This book is the work of three people who, beyond friendship, are united by their love for wine. We dedicate it with all our love and respect to the anonymous vine growers who strive for the vineyard to bear fruit, and to the winemakers who embrace the blessed fruit with passion and care for the "birth" of wines that hide within them the tradition, aromas, and flavors of the Greek land.
