Pine honey has a distinct aroma and is dark when produced in the autumn and lighter when produced in the spring. Its concentration of sugars is low, making it not very sweet and it crystallizes relatively slowly. It comes from the honeydew of the insect Marchalina hellinica and is primarily produced in N. Euboea. Studies on the antioxidant content of pine honey have shown that it is rich in phenols such as proto-catechuic, caffeic, vanillic acid, and p-coumaric acid. These substances give it a particularly high antioxidant capacity. It has a high concentration of trace elements such as calcium.
