The HI-981038 Bread & Dough pH Tester is designed for measuring pH during baking processes and ensuring compliance with food hygiene regulations and hazard analysis at critical control points (HACCP).

Features & Functions

  • The tester features a one-button operating system and is easy to use.
  • It has a compact and waterproof casing and automatic pH calibration at one or two points.
  • All measurements are automatically compensated for temperature fluctuations with a built-in temperature sensor.
  • The conical-shaped electrode is ideal for piercing solid and semi-solid samples.
  • The open junction prevents the junction from clogging with samples.
  • Conical Tip Sensor Features - The conical tip allows direct measurement in whey and semi-solid samples.
  • Specialized Glass Composition - The specialized low-temperature (LT) pH glass ensures quick stabilization and accurate results at lower temperatures.
  • Open Junction Reference - The open junction design consists of a solid gel interface between the dough sample and the internal Ag/AgCl reference.
  • This interface prevents silver from entering the sample and makes it impervious to clogging, resulting in quick response and stable measurement.
  • Polyvinylidene Fluoride (PVDF) Body - PVDF is a food-grade plastic that is resistant to most chemicals and solvents, including sodium hypochlorite, and is also resistant to fungal growth. It has high abrasion resistance, mechanical strength, and UV resistance.
