Collected in the fertile pine forests of Northern Evia from September to November. This autumn harvest depends on the honeydew secretions of the insect marchalina hellinica, known as the pine worker.

It produces a particularly nutritious honey rich in minerals and trace elements, along with many other important substances. Its color is dark brown, and its taste is full-bodied and mildly sweet, with a characteristic heavy aroma.
