White pepper is exclusively the inner part of the black pepper fruit.

The dark-colored outer skin is removed either after soaking the fruit in water.

Then, the inner part of the fruit is dried, resulting in the well-known white pepper, which has a different taste and aroma compared to black pepper.

It is less aromatic but has more heat and a more assertive flavor.
