The Culturing for Kefalotyri for 50 liters of milk is a mixture of live microorganisms/bacteria that assist in the fermentation of milk and lead to well-developed and rich-tasting kefalotyri and ladotyri. Additionally, the culture aids in the aging of the cheese. The culture has been freeze-dried and is in powder form, ideal for 50 liters of milk. One package yields about 6 kilograms of kefalotyri or ladotyri. This specific variety can also be used for other hard cheeses.

Instructions for Use of Cultures:
Shake the packet so that the powder collects at the bottom. With sterilized scissors, open the packet without inserting your fingers inside. Pour the culture into 2-3 liters of milk at a temperature of at least 35 degrees Celsius, which we have pasteurized.
Using a sterilized stainless steel or glass stick, stir well to dissolve the powder. Dissolve only as much culture as needed each time. The solution should not remain for more than 10 minutes before adding it to the milk. Pour the solution into the milk at least 20 minutes before adding the rennet, to give the microorganisms time to grow. Always keep the culture sealed and in the refrigerator.
