The Culturing for Feta Cheese is a variety of live microorganisms and fermenting bacteria that contribute to the rapid acidification of milk and curd as well as the maturation of Feta. The culture imparts the characteristic taste and aroma to the feta and leads to a rich flavor. It also aids in the maturation of the cheese. The culture is freeze-dried, in powder form, ideal for 1000 liters of milk. One package provides approximately 500 kg of Feta.

It can also be used for other varieties of soft brined cheeses. It has all the favorite characteristics and aromas that define Feta.

Usage Instructions:

  • Shake the packet so that the powder settles at the bottom.
  • Using sterilized scissors, open the packet without touching the inside with your fingers.
  • Pour the culture into 2-3 liters of milk at a temperature of at least 35 degrees Celsius, which has been pasteurized.
  • With a sterilized stick, stir well to dissolve the powder.
  • The solution should not remain for more than 10 minutes before adding to the milk.
  • Pour the solution into the milk at least 20 minutes before adding the rennet.

Instructions for Making Feta Cheese:

  • Drain the milk.
  • Pasteurize the milk at 65 °C for 30 minutes and cool it to 32-34 °C.
  • Inoculate with pure feta-type culture.
  • Add a break of calcium chloride.
  • Add the rennet. Allow to set for 45-60 minutes.
  • Cut the curd and remove the whey.
  • Add 1% cooking salt to the curd.
  • Drain the curd in perforated molds.
  • Let the whey drain, with flips as needed.
  • Place the cheese in containers with 12% brine.
  • Transfer the cheeses to the refrigerator for maturation for at least 15 days.

Keep the packet cold and dry.
