  • The knife is very sharp. It has a very high-quality handle but also the blade is of high quality. It has some weight to it but it is not tiring or too heavy.

I recommend it to anyone who wants to get a Japanese knife for little money. It is comparable to many much more expensive ones

I only have it for vegetables and it works quite well for me. The sharpening just requires attention, but nothing special: Manually sharpened to 15-17 degrees with a 6000-grit whetstone.

Description & Specifications

The Japanese-style Fissman Kensei Bokuden Nakiri knife is designed for cutting and chopping vegetables and fruit. Its blade, made from high-carbon Japanese AUS-8 steel, is cold-hardened using the Korudo process to 58 HRC and hand-sharpened with a 6,000-grit waterstone at an angle of 15–17° per side.

The G-10 handle is wear- and water-resistant, withstands both low and high temperatures, provides a secure grip and does not absorb unwanted odors. For care, do not leave the knife wet for long periods or wash it in the dishwasher. A sharpening stone is recommended for sharpening. After use or sharpening, rinse and dry it immediately with a clean cloth.
