It appears that FISSMAN has established itself as the leading company in the production of knives and kitchen tools. In the category of knives, the Nakiri is a very popular knife from Japan, ideal for cutting or quick and efficient slicing of vegetables and fruits.

  • Corrosion resistance and durability: It uses special cold hardening technology Korudo, reaching the optimal level of 58 HRC on the Rockwell scale. The blade is made from high carbon Japanese steel AUS-8, which is very strong and sharp.
  • Cutting precision: The knife is hand-sharpened on a 6000 grit granite water stone for impeccable sharpness.
  • Ideal cutting angle: Sharpening is done at an angle of 15-17 degrees.
  • Handle: The knife handle is made of G-10, a wear-resistant, waterproof, high-quality material that prevents slipping and absorption of foreign odors.
  • Care instructions: High carbon steel should not remain wet for a long time. The use of a sharpening stone is recommended. After sharpening, rinse with water and dry immediately with a clean towel. Do not wash in the dishwasher.
  • The product meets all safety and hygiene standards.

    I only have it for vegetables and it works quite well for me. The sharpening just requires attention, but nothing special: Manually sharpened to 15-17 degrees with a 6000-grit whetstone.
