The Kai Shun DMS-210 knife set includes a paring knife with a 9 cm blade and a utility knife with a 15 cm blade. The blades have a VG-MAX steel core clad in 32 layers of Damascus steel, with a double bevel. Their hardness is 61 (±1) HRC.
The handles are made of black Pakkawood with resin. The knives are made in Japan and should be washed by hand. Wash and dry them immediately after use with a soft cloth, especially after cutting acidic foods.
