So far I have done about 30-40 fryings. With 500-600g of peeled potatoes I always get excellent results.
After soaking the potatoes to remove the starch, I drain the water and leave them in the strainer for about 50' to dry on their own.
Temperature at 190 degrees and as soon as the light goes off you immediately put in the potatoes, I take them out in about 10-12'.
I use sunflower oil in the fryer, whoever wants can also use virgin olive oil but it's more expensive. (I have tried a mix with 2L sunflower oil and 1.2L virgin olive oil and they came out a masterpiece)
DO NOT use extra virgin olive oil, it is NOT suitable because it has a low smoke point.
The only negative is that it needs 3.2L of oil, they could have made the basket dimensions smaller at the factory so it would take about 2L.
