The extra virgin olive oil contains valuable components that promote health and well-being. The Monastery operates a modern certified olive mill, which is a continuation of a traditional stone-built olive mill. The olive grove includes 4000 olive tree roots, some as old as 800 years, along with self-rooted olive trees and unique varieties. Additionally, there are modern olive groves with another 4000 olive trees. Innovative production processes are applied in the monastery's olive grove, such as composting the mill's by-products, without the use of chemical fertilizers.
