It is a natural product obtained exclusively from the mixture of soft wheat flour type "0" and water, acidified by a complex of yeasts and lactic bacteria. It is indicated for dough fermentation in bakery and pastry products.

It is an inert traditional sourdough, activated by adding 100g-Caputo Active Dry Yeast in powder or any other active dry yeast. It imparts amazing flavor and aroma to preparations, improves digestibility, and increases their shelf life.

Use it in pizza dough, pastry products, and other classic preparations.
