Fructo-oligosaccharides (FOS) from chicory root fiber are used as a sweetener and as a substitute for gelatin. Fructo-oligosaccharides (FOS) are a natural form of soluble carbohydrates found in many vegetables, such as endive and onions. When taken orally, they are only partially absorbed, as most of them are used as a nutritional substrate for the growth of the normal intestinal bacterial flora (mainly the genera Bifidobacteria and Lactobacillus).
