Chicken & orzo with mushrooms

• 1 medium chicken cut into portions
• 400g orzo with mushroom
• 1 medium onion finely chopped
• 2 cloves garlic crushed
• 4 cups finely chopped tomatoes
• 1 tbsp basil
• Salt
• Pepper
• Olive oil
• 300g kefalotyri cheese in cubes

Recipe instructions: Sauté the onion and garlic. Add the chicken and brown it on both sides until it forms a crust. Pour in the tomatoes, lower the heat and let the chicken cook. In another pot, sauté the orzo with the mushroom in a little olive oil. Place the chicken with all its juices in a baking dish, add the orzo and 2 cups of water, stir and bake at 180ºC for 20 minutes. Check often and add water if needed. Before turning off the heat, add the cheese and stir well to distribute it evenly.
