It was an important staple food in Europe from the Bronze Age to medieval times. Today, spelt survives as a relic crop in Central Europe and northern Spain, and has emerged as a healthy food. It is sometimes considered a subspecies of common wheat (Triticum aestivum) and has six sets of chromosomes, like soft wheat.
