Made with 100% BIO spelt flour. Spelt, also known as dinkel wheat or hulled wheat, is a type of wheat that has been cultivated since about 5000 BC. Spelt was a significant staple food in parts of Europe from the Bronze Age to medieval times. It now survives as a relic crop in Central Europe and northern Spain and has found a new market as a healthy food.

Spelt is sometimes considered a subspecies of the closely related common wheat species (Triticum aestivum), in which case its botanical name is considered triticum aestivum subsp. spelta. Like soft wheat, it is a hexaploid wheat, meaning it has six sets of chromosomes.
