Soutzoukloukoum is a traditional sweet produced in Komotini. It has a unique texture, is soft and tender, with a sweet taste and pleasant aroma. It contains walnuts and is coated with Aegina pistachios.

The preparation process has the characteristics of a ritual:

• Whole walnuts are threaded one by one onto a string.
• The mixture is prepared with water and sugar.
• The strings with the walnuts are dipped into the cauldron and hung on poles to let the mixture set.
• The loukoumi acquires a caramelized, amber color and is covered with Aegina pistachios.
