Care and maintenance of cast iron cookware for professional use:
- Cleaning: Hand wash the cast iron cookware using a small amount of soap. If necessary, use a scraper to remove any stuck-on food. For stubborn stains, simmer a little water for 3-5 minutes and, after the pan cools down, use the scraper.
- Drying: Dry immediately and carefully with a lint-free cloth or paper towel. If you notice some black residue on your towel, it is the seasoning and this is completely normal.
- Oiling: Apply a thin layer of cooking oil or seasoning spray to the surface of your cookware. Use a paper towel to wipe the surface until no oil residue remains.
