Classic Jasmine tea with a rich flavor and light-colored infusion. Jasmine tea became very popular in China during the Song Dynasty. The jasmine flowers open at dusk and release their intoxicating fragrance. They are collected in the morning when still fresh and closed and kept in a cool place until night. At the right time, they are mixed with freshly picked tea leaves that have been preheated to better absorb the jasmine scent. The process continues with reheating the leaves a second time to fully absorb the aroma. Workers use special wooden tools to gently beat the tea leaves with the jasmine petals, helping to release more fragrances. This process is repeated four to five times, while the tea is reheated to evaporate the moisture from the flowers and prevent mold.
