Amaranth is an annual herb that reaches about 80 centimeters in height. In Greece, it has been known since antiquity and is used in Greek cuisine, while it is also a particularly popular vegetable in India, Africa, and Jamaica.

The consumption of amaranth is recommended in almost all diets, as it is an excellent source of vitamins and trace elements while providing few calories. Its high content of vitamin A, vitamin K, vitamin C, iron, potassium, magnesium, and manganese adds to its beneficial properties.

Research has shown that amaranth lowers bad cholesterol due to its high fiber content. Amaranth can be safely consumed by people with hyperlipidemia, anemia, and gluten intolerance.
