The product is an authentic Greek Epirus sour trachanas, made with passion and respect for tradition. It is prepared from pure organic cereals cultivated in the fertile soils of Epirus, in Bourazani Konitsa, in small quantities without additives or preservatives and with pure local milk.
It is ground in a stone mill, as it was done in the past, to preserve the natural flavor and nutritional value of the cereals. The result is a product rich in dietary fiber, proteins, and B-complex vitamins.

The sour trachanas is made after the milk or yogurt naturally sours for 2-3 days, acquiring its characteristic strong and rich flavor.
For its preparation, the following are required:
- 1 cup of trachanas
- 1,200ml (5 cups) water
- 50ml olive oil
- a little salt
Instructions: In a pot, heat the olive oil over medium to high heat. Add the trachanas and stir for a few minutes. Add the water along with a little salt and bring the mixture to a boil. Once it starts boiling, reduce the heat and simmer for about 10–15 minutes, until the soup thickens.
It can be served with crumbled feta or grated Parmesan, bukovo (crushed red pepper), prosciutto, or sautéed mushrooms for a richer taste.
