ABV AROMAZYME is an enzymatic preparation with a strong glycosidase activity derived from the selected strain Aspergillus niger. It consists of β-glucosidase enzymes capable of hydrolyzing glycosidic bonds, releasing monoterpenic alcohols and glucose. It was developed to increase the complexity of aroma and hop flavor profile in beer.
- The application of ABV AROMAZYME during fermentation improves hop utilization.
- It releases additional volatile aromatic compounds.
- It reduces the total amounts of hops.
It works excellently with yeasts such as LALLEMAND BRY-97, LALLEMAND VERDANT IPA, and LALLEMAND NEW ENGLAND. The package contains 1 dose of 2.5g.
Usage instructions:
- For batches up to 25lt: dissolve one dose (2.5g) in 25ml water and add at the end of fermentation.
- For batches up to 50lt: dissolve 2 doses (5g) in 50ml water and add at the end of fermentation.
Ideally add before dry hopping for greater enzyme activity.
