The organic balsamic with blackberry from Byodo ideally enhances bitter salads such as radicchio, endive, and valerian, as well as fresh spring salads and white sauces. It pairs excellently with summer dishes, such as antipasti and light dips, adding fruity balance and pleasant acidity.
The organic vinegar by Byodo is produced from alcohol, which – depending on the variety – comes from red wine, blackberry wine, and grain alcohol. The alcohol is placed in large fermentation tanks and, with the addition of acetic acid bacteria and controlled oxygen supply, is slowly converted into vinegar at a stable temperature of about 25°C. This process is known as the continuous fermentation method.
The characteristically sweet and fruity taste of the organic balsamic with blackberry is achieved through a specially balanced ratio of organic apple cider vinegar, concentrated apple juice, and concentrated blackberry juice. All raw materials come 100% from organic cultivation.
