LalBrew Farmhouse was selected using the most advanced propagation techniques, with classical and non-GMO methods to remove the STA1 gene responsible for diastatic activity in Saison yeasts. Care was taken to ensure normal brewing sugar use for dry saison production.

The patented technology from the University of California Davis (USA) ensures that the strain will not produce sulfurous beneficial substances, enhancing the aromatic characteristics of saison yeast.
