WildBrew™ Philly Sour is a unique type of Lachancea that was naturally selected by the University of Science in Philadelphia, USA.
This yeast produces moderate amounts of lactic acid in addition to ethanol in a simple fermentation step.
Main features:
- Aroma and taste: sour, red apple, and stone fruit, primarily peach.
- Attenuation: high attenuation with good head retention.
- Applications: suitable for styles such as Berliner Weiss, Gose, American Lambic Styles, and American Wild Ales.
