White tea is obtained from the most tender, immature buds that are picked early in the spring when the leaves are covered with small white hairs. The leaves are not fermented, but only withered and dried, thus retaining valuable substances in a highly concentrated form. The leaves of white tea are characterized by an exemplary floral aroma.
