Chef Nikos Fotiadis, starting from some of the most well-known "culinary" rebetiko and traditional songs, gathers in The Musical Corridor tasty Greek recipes inspired by our musical tradition. He kneads hashish bread along with Markos Vamvakaris's white loaf; sets up a pot for fish soup accompanied by Yiannis Papaioannou and Charalampos Vasileiadis; prepares lamb with spinach sent by the butcher to sweeten Giovan Tsaous's lively widow Eleni; skillfully extinguishes with wine the spirited rooster of Vasilis Tsitsanis; and makes syrupy tulumbes to the rhythm of Panagiotis Toundas's "Tombourlika".
The Musical Corridor is not just a simple cookbook. The first recordings of the songs presented, their lyrics, and the circumstances that gave birth to them are documented with great care and enriched with abundant illustrative material. At the same time, the musical aspect of the book is enhanced with selected songs in contemporary reinterpretations by Giannis Kotsiras, Babis Tserto, Nadia Karagianni, Panos Rentifis, Yiota Liapopoulou, the groups "Rebetien" and "Rombia", among others, in order to fully convey to the audience the atmosphere that inspires it.
In The Musical Corridor, cooking meets musical art and folklore in a triply enjoyable journey. A hearty culinary album in an original composition of songs and dishes.
A FEW WORDS ABOUT THE HISTORY OF THE BOOK
The Musical Corridor by Nikos Fotiadis was first published in April 2016 along with a gift CD (curated by Vaggelis Machairas). Starting with about 40 of the most famous "culinary" rebetiko and traditional songs such as "You Are Fluffy Like Bread", "The Sardine Plays Openly", "Oh Katerina Mine", "I'm Drinking Wine", "I Am a Cheerful Rooster", "You Are a Speckled Hen", "The Red Mullet", and others, Fotiadis gathered classic and lesser-known Greek recipes that converse with our musical tradition. The book was greatly loved, sung extensively, and numerous interviews and tributes were held on radio, television, and newspapers (on 2/5/26 it was the focus of the ERT1 show #Together with Giorgos Kouvaras). Fotiadis presented The Musical Corridor in many parts of Greece and continues to organize new presentations. As he characteristically notes, The Musical Corridor is a book that "does not want us to 'forget' what we as a people have gone through, our tasteful customs and habits, our culinary wealth." A work that should be read, tasted, and listened to by as many people as possible.
